How many fruits and vegetables can you pack into one muffin?

I’m on snack duty for soccer this weekend so I made muffins. But not just any muffin. The boys are going to eat half a serving of vegetables and fruit in these moist morsels and a whopping 4 grams of fibre! Now that’s better than any granola bar out there. I added 3 cups pureed pumpkin, 2 cups 100% Premium Pure Tropicana Orange Juice, 3 large bananas, 1 cup apple sauce and 2 cups raisins. That’s 19 servings of vegetables and fruit.

Pumpkin Orange Banana Raisin Oatmeal Muffins

(Makes 36 muffins)

2 cups whole wheat flour

2 cups white flour

2 cups quick rolled oats

1 cup oat bran

1 cup sugar

1 Tbsp baking powder

1 Tbsp baking soda

2 tsp salt

3 bananas

1 can (753ml) pureed pumpkin

1 cup apple sauce

2 cups Tropicana Premium Pure OJ

2 eggs

1 Tbsp vanilla

1/2 cup vegetable oil

½ c melted butter

2 cups raisins or dried cranberries
