How Tofu is made
What is Tofu?
Tofu is a product made from soybeans. Soybeans are soaked overnight and then dehulled and ground with water. The mixture is then cooked at a very high temperature. Once the solid material (okara) has been filtered, the soy concentrate is coagulated, using various coagulants like Glucono-Delta-Lactone (an all natural non-dairy ingredient), Calcium Sulphate or Magnesium Chloride, depending on the variety of tofu being made. This soy curd is then pressed, cut and packaged for the supermarkets.
Nutrition Information
Tofu is low in sodium, low in calories (varies depending on firmness), cholesterol-free, high in protein, low in saturated fat and a good source of calcium. Tofu is dairy-free and contains no preservatives and is made from all natural ingredients. Tofu is a complete protein containing 8 essential amino acids.
There is some research supporting the intake of soy and the prevention of heart disease, osteoporosos, cancer and the recution of menopausal symptoms.
